The Fermentation Post-Harvest Process
In Cacaotale, our fermentation process is carefully controlled to develop the rich flavors of cacao. The beans are stored in wooden boxes, with temperature checks and regular stirring, ensuring even fermentation. After several days of gradual movement between boxes, the beans are split, observed for quality, and then sun-dried to perfection, preserving their natural aroma and depth of flavor.
